Tilapia, Tuscan Style

Tilapia is one of America's favorite fish. It's relatively inexpensive, and because it's fish, it's pretty healthy.

 

But you can only have plain fish so many times before you start to want a change. And here's a fun way to switch things up—add an Italian flair!

 

The typical flavors of Italy are tomato, basil and mozzarella. They have the same red, white and green as the Italian flag, and they're dominant flavors in much of Italian cooking. So try this Italian-style tilapia dish that uses all three primary ingredients!

 

The Tuscan region of Italy has some of the more traditional dishes, so this one fits right in.

 

Tilapia, Tuscan Style      

Serves 4

Prep time: 2 minutes; Cook time: 10 minutes

 

Ingredients:

4 (6 oz) tilapia fillets

1 cup chopped tomatoes, seeded

1 Tbs fresh chopped basil

2 oz fresh mozzarella, divided

 

Directions:

Preheat oven to 450°F.

Stir together tomato and basil.

Place tilapia on a greased baking sheet. Sprinkle with salt and pepper to taste.

Bake 6 minutes; turn fish and top each with 1⁄2 oz mozzarella and 1⁄4 cup tomato mixture.

 

Return to oven and cook another 4 minutes.
