Tomatillo Salsa
Serves: 6

Cook Time: 5 minutes
Ingredients:
2 lbs whole tomatillos
3 cups chopped onions
3 jalapeno peppers
6 garlic cloves
1 Tbs cumin, fresh ground
1 cup chopped cilantro
2 tsp kosher salt
1 tsp ground black pepper
1/2 cup lime juice
Directions:
In a large pot add tomatillos, onion, jalapenos and garlic. Cover with water and bring to a boil. Reduce heat and simmer for 5 minutes. Drain and place vegetables on sheet pan. Refrigerate until cool.
Add vegetable mixture to blender. Add cumin, cilantro, salt, pepper and lime juice; blend until smooth.
