Traditional Foods Mark Juneteenth
There's nothing like grits!
Cheddar shrimp and Grits

Ingredients:
1 1/4lbs fresh or frozen medium shrimp, in shells
1 (14 oz) can reduced-sodium chicken broth
1 1/2 cups skim milk
1 cup regular grits
2 tsp olive oil
1 onion, sliced
2 cloves garlic, minced
1 Tbs snipped parsley
1/2 cup shredded reduced-fat cheddar cheese
1/4 cup sliced green onions
Directions:
Thaw, peel and devein shrimp. Set aside.
In a saucepan, combine broth, milk and grits. Bring to a boil, reduce heat, cover and simmer 5 minutes or until grits are desired consistency, stirring occasionally.
In a large skillet heat olive oil and add onion and garlic. Sautee 5 minutes or until onion is tender. Remove from skillet and add shrimp to the same skillet. Cook 3 minutes or until shrimp are opaque. Stir in cooked onions and parsley.
Divide grits among 6 bowls. Top with shrimp and sprinkle with cheese and green onions.
