Turnips
Try them sliced thinly, raw, in salads. Mash them with regular potatoes.
Crispy Turnip 'Fries'
Ingredients:
3 pounds turnips
1 tablespoon vegetable oil
1/3 cup grated Parmesan
cheese
1 teaspoon garlic salt
1 teaspoon paprika
1 teaspoon onion powder
Directions:
Preheat oven to 425 °F . Spray a baking sheet with nonstick coating. Peel the turnips, and cut into French fry-sized sticks, about 1/3 by 4 inches. Place into a large bowl, and toss with the vegetable oil to coat. Place the Parmesan cheese, garlic salt, paprika, onion powder in a resealable plastic bag, and shake to mix. Place the oiled turnips into the bag, and shake until evenly coated with the spices. Spread out onto the prepared baking sheet. Bake in preheated oven until the outside is crispy, and the inside is tender, about 20 minutes. Serve immediately.

Roasted Turnips with Balsamic Vinegar
Ingredients:
2 large turnips
1 T olive oil
1 T balsamic vinegar
additional 1 tsp. balsamic vinegar for finishing
salt and freshly ground black pepper to taste
Directions:
Preheat oven to 450° F. Peel turnips with knife, then cut into pieces about 2 inches square. Wisk together olive oil and balsamic vinegar and toss with turnips, then spread in single layer in roasting pan. Roast turnips 25-30 minutes, or until slightly browned and softened.
Remove turnips from oven and place into serving bowl. Toss with additional 1 tsp. balsamic vinegar, season to taste with salt and freshly ground pepper, and serve immediately.
