It's hard to gauge how much pasta to cook. It expands so much by the time it's done that knowing how much to start with is a challenge!
The good news is that leftover cooked pasta makes mealtimes really easy. It's a snap to add a few chopped vegetables and a splash of your favorite salad dressing for a pasta salad, or to pair it with your favorite sauce.
So when you think about it, cooking extra pasta is a smart way to plan ahead!
Storing and using cooked pasta is easy:
While pasta is still warm, toss with a teaspoon of olive oil to keep the strands from sticking together.
Place the pasta in a food storage bag or container and put in the refrigerator. Lightly toss the bag to make sure the pasta is not sticking. Refrigerate pasta for up to 5 days. Pasta doesn't freeze well; use the pasta cold if the recipe calls for it.
You can reheat the pasta by dropping into a large measuring cup full of boiling water for 30-60 seconds, just until hot. Do not leave the pasta in the water for longer than one minute. Continue with the recipe.
