Vegetable Soup

Vegetable SoupVegetable Soup is a good way to add vegetables to your child’s diet while keeping them warm.

 

Serves: 4

Prep Time: 20 minutes       Cook Time: 20 minutes

Ingredients:

1 Tbs Food Club Extra-Virgin Olive Oil

1/2 onion, chopped

2 garlic cloves

2 celery rib, chopped

2 medium carrots, diced

2 (14 oz) can low-sodium chicken broth

1/2 tsp Food Club Dried Thyme

2 Tbs fresh parsley, chopped

1 tsp dried oregano leaves, chopped

1 tsp Food Club Dried Basil Leaves

1 medium potato, diced

1 cup fresh green beans, chopped

1 zucchini, diced

Salt and pepper, to taste

 

Directions:

In skillet, add olive oil and sauté onion, garlic, celery, and carrots for 3 minutes over med-high heat to brown slightly. In a pot, add broth, sauté vegetables, thyme, parsley, oregano, basil and potatoes; simmer for 10 minutes. Add green beans, and zucchini; cook an additional 5 minutes.
