Veterans Day 2007: How Will You Observe?Your parents may have called it Armistice Day, and now we call it Veterans Day, but the idea is all the same: it's a day to honor and remember those who served in the United States military forces.

 

November 11 is the anniversary of the signing of the Armistice that ended World War I. Major hostilities of World War I formally ended at the 11th hour of the 11th day of the 11th month of 1918 with the German signing of the Armistice. Several years later, Armistice Day was officially renamed as Veterans Day, so that all veterans, not just World War I vets, could be recognized and thanked for their service. This observance is now a national and state holiday, and pays tribute to both living and deceased service members.

 

How will you observe Veterans Day in 2007? Maybe your community has a parade, or perhaps you could visit a nursing home to visit with some of our nation's heroes. Red White and Blue Mini Cheesecakes

Show your American spirit with a patriotic treat!

 

Ingredients:

2 (8 oz) packages reduced fat cream cheese, softened

1/3 cup honey

2 eggs

1 tsp vanilla flavoring

12 vanilla wafer cookies

1 (21 oz) can cherry pie filling

1 (7 oz) can whipped cream

1 pint fresh blueberries

 

Directions:

Preheat oven to 325° F . Place paper liners in 12 muffin cups and put one wafer cookie in each.

 

Mix cream cheese, honey and vanilla with an electric mixer until smooth. Mix in eggs until creamy. Fill each muffin cup 3/4 full and bake 12 to 15 minutes, until cheesecakes bounce back when lightly touched.


Let cool completely.


Top with cherry pie filling, a swirl of whipped cream and several blue berries for a red, white and blue garnish.
