Weekend Breakfast SpecialWeekends. Time to slow the pace a bit and take time to make memories. Food memories are some of the best, and a relaxed, delicious brunch is a great way to spend Saturday and Sunday mornings.

 

Here's a recipe that is lower in fat than most, and uses wholesome ingredients…so besides tasting wonderful, you're actually eating good food!

 

Do yourself a favor: plan a weekend brunch, featuring our reduced-fat French toast, some sliced fruit, and maybe scrambled eggs. Now there's something worth waking up for!

 

 

Reduced-Fat French Toast

A Brookshire's Best Recipe

 

Ingredients:

1/4 cup liquid egg substitute or 1 egg

1/4 cup Splenda or sugar

1 tsp cinnamon

1/2 tsp nutmeg

2 tsp vanilla

1 1/2 cups Dairy Pride Fat-Free Milk

1 tsp olive oil

8 slices whole wheat bread, slightly stale

 

Directions:
Whisk together the egg substitute, cinnamon, nutmeg, vanilla and milk until thoroughly mixed.

 

Heat a griddle or large frying pan and spread olive oil over the surface. Soak the bread slices in the egg mixture until thoroughly moistened. Place the soaked slices on the griddle.

 

When the bottoms are golden brown, flip with a spatula and brown the other side. Keep slices warm in the oven until all are ready to serve.

 

Note: Slightly stale bread won't fall apart when soaked in the egg mixture. To make slightly stale bread, leave it out, uncovered, for several hours.
