Crunchy Organic Chicken Nuggets
Ingredients:
1 pound boneless, skinless Smart Chicken® Organic Chicken Breasts
1 1/2 cups plain organic yogurt
3 cups crushed Full Circle Organic Corn Flakes
2 Tbs fresh parsley, chopped
1 tsp sea salt
1/2 tsp freshly ground white pepper
organic olive oil for coating the baking pan
Directions:
Preheat oven to 375° F. Slice the chicken breasts into 2-inch strips. Marinate chicken pieces in yogurt for one hour or up to 24 hours, refrigerated. Prepare the crunchy crust by combining the corn flakes, parsley, salt and pepper in a bowl. Place the corn flake mixture in a plastic or paper bag. Drop chicken pieces into the bag and shake thoroughly to completely coat. Remove chicken pieces and place on a sheet pan that has been lightly coated with oil. Bake for about 25 minutes, or until crunchy on the outside and cooked through.

Chopped Asparagus and Bacon Salad
Ingredients:
1⁄4 cup grated organic Romano cheese
1⁄4 cup Full Circle Organic Olive Oil
freshly ground black pepper to taste
2 bunches fresh asparagus, trimmed and finely chopped
4 scallions, trimmed and finely chopped
4-8 large organic lettuce leaves
8 slices cooked Applegate Farms Bacon, finely chopped
A handful of fresh mint leaves, finely chopped
Directions:
1. Mix together the Romano cheese and 1⁄4 cup hot water in a large bowl until the cheese has melted. Whisk in the oil and season with pepper. Add the asparagus and scallions and toss the vegetables in the dressing until well coated.
2. Arrange the large lettuce leaves on individual plates or a large platter. Spoon the asparagus onto the leaves, then scatter the bacon and mint over the asparagus.
