Sizzlin’ Summertime MealWhat’s better in the summer than cooking on the grill? Here are a couple of healthy recipes to get you started.

 

Best Barbecue Chicken


2 Tbs butter
1/2 cup ketchup
1/4 cup lemon juice
1/4 cup low-sodium soy sauce
1/4 tsp hot sauce
6 skinless, boneless chicken breast halves

 

 

Melt butter in a medium saucepan. Add all ingredients except chicken; bring to a boil. Partially cover, and simmer until reduced to 2/3 cup (about 15 minutes), stirring often.

 

Place chicken on grill rack coated with cooking spray. Grill 12 minutes or until done, turning and basting with half of the sauce after 8 minutes; serve with remaining sauce.

 

Cool Green Salsa

This is a great recipe to pair with a zesty chicken from the grill!

 

2 cups seedless green grapes, quartered

1 small jalapeño, cored, seeded and minced

2 medium scallions, thinly sliced

1/2 green bell pepper, cut into small dice

3 tablespoons chopped fresh mint

2 tablespoons fresh lime juice

Salt and pepper to taste

 

In a medium bowl, mix all ingredients. Let stand while the meat cooks.  Serve alongside the meat for a refreshing accent.

 

Makes about 2 1/2 cups.
