Fresh Tomato Relish
Prep Time: 10 minutes
1 lb ripe tomatoes, cored, seeded and cut into 1/4-inch dice
2 Tbs shallot, minced
1 garlic clove, minced
2 Tbs Food Club Extra-Virgin Olive Oil
1 tsp red wine vinegar
2 Tbs basil, chiffonade
1/4 tsp Food Club Salt, or to taste
1/4 tsp Food Club Ground Black Pepper, or to taste
In a medium bowl mix together tomatoes, shallot, garlic, oil, vinegar and basil.
Season with salt and pepper.
