Pork Chops with Pear Salsa

Pork Chops with Pear SalsaPrep Time: 15 minutes, plus marinating
Cook Time: 15 minutes
Serves: 2

1/2 cup lime juice
2 Tbs Food Club Olive Oil
2 garlic cloves, minced
1 1/2 tsp ground cumin
1 1/2 tsp dried oregano
1/2 tsp Food Club Ground Black Pepper
2 (4 oz) pork chops
3 large firm ripe Bartlett pears, peeled and cored
1/2 cup red grapes, halved
1/2 cup finely diced purple onion
1/2 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1 jalapeño chili with seeds, minced
1 tsp Food Club Sugar
1/4 tsp Food Club Salt

In a large zip top bag combine 1/4 cup lime juice, oil, garlic, cumin, oregano and pepper. Add pork chop to bag. Seal bag and turn to coat; refrigerate overnight. Drain and discard marinade.

Grill pork, uncovered, over indirect medium heat 6 to 7 minutes on each side or until juices run clear.

In a medium bowl combine 1/4 cup lime juice, diced pears, grapes, diced onion, chopped cilantro, chopped mint, minced jalapeno and sugar. Season with salt and pepper. Serve salsa over pork.
