tomato, mozzarella and basil salad
Prep Time: 15 minutes
4 medium very ripe tomatoes, cored and cut into slices 1/4 inch thick
1 lb fresh mozzarella cheese, cut into slices 1/4 inch thick
1/4 tsp kosher salt
1/8 tsp ground black pepper
2 Tbs roughly chopped fresh basil
1/4 cup extra-virgin olive oil
Layer tomato slices, cheese slices and basil leaves. Season with salt and pepper.
Drizzle olive oil over salad.
