Cranberry Pear Salad

Prep Time: 35 minutes
Serves: 6

3 Tbs Food Club Extra Virgin Olive Oil
3 Tbs sherry vinegar
1/2 tsp kosher salt
1 red bell pepper, seeded and cut into ¼ inch pieces
1 pear, cut ¼ inch pieces
1/2 red onion, julienne (about ¼ cup)
1/2 cup dried cranberries
1 head romaine lettuce, cut in ½ inch pieces (about 3 cups)
4 oz feta cheese, crumbled (about 1 cup)
1/2 cup pistachios , toasted and coarsely chopped

Whisk oil, vinegar and salt together in large bowl. Add bell pepper, pear, onion and cranberries; toss and let stand at room temperature to blend flavors, 5 minutes.

Add romaine, feta cheese and pistachios; toss to combine.
