Gluten Free: Asian Slaw

Prep Time: 20 minutes, plus chill timeAsian Slaw
Serves: 6

1 (3-inch) piece ginger, peeled and finely grated
1/2 cup seasoned rice wine vinegar
1/4 cup peanut oil
1 tsp toasted sesame oil
8 cups Napa or green cabbage, thinly shredded
1 red bell pepper, cut into strips
1 jalapeno pepper, seeded and finely minced
1 large carrot, peeled and grated
1/2 purple onion, sliced thin
1 cup cilantro, roughly chopped

In a large bowl mix together all ingredients. Chill before serving.
