Ingredients
1/2 cup butter, room temperature
1 cup granulated sugar
1 tsp pure vanilla extract
1 large egg
1/2 cup molasses
2 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1 1/2 cups old-fashioned rolled oats
Directions
  1. Preheat oven to 350° F.
  2. Line baking sheets with parchment paper or a silicone baking mat.
  3. Add the butter to an electric mixer, and beat with the sugar until creamy.
  4. Add the vanilla, egg and molasses. Beat until well-blended.
  5. In a medium bowl, combine the flour, salt, baking soda, cinnamon and ginger.
  6. While beating on low, slowly add the flour mixture to the wet ingredients.
  7. Increase the speed, and beat until well-blended.
  8. Turn off the mixer, and fold in the oats.
  9. Using a 1 1/2-inch scoop, place balls of dough on the baking sheets.
  10. Bake for 13 minutes.
  11. Let the cookies cool on the baking sheets before enjoying.
