


Banana-Custard French Toast

Ingredients
1/2 cup Egg Beaters® or 2 whole eggs
1/3 cup plain yogurt
2 Tbs light brown sugar, divided
1/4 tsp salt
2 Tbs butter
4 slices French bread, thick-cut
2 bananas, halved and sliced lengthwise
1/4 tsp ground cinnamon
2 Tbs pecans, chopped
maple syrup, for serving
powdered sugar, for serving
Directions
- In a wide shallow bowl, beat the eggs until frothy. Stir in the yogurt, 1 tablespoon of brown sugar and salt. In a large skillet over medium heat, melt the butter. Dip both sides of the bread into the egg mixture, and place in the pan. Cook for 1 to 2 minutes per side until lightly golden.
- Transfer to a baking sheet. Top each piece of bread with 2 to 3 banana slices. Drizzle some of remaining egg mixture over the bananas. Sprinkle the top with remaining brown sugar and cinnamon.
- Place under a broiler for 2 to 3 minutes or until egg mixture is set and brown sugar begins to caramelize. Serve with maple syrup, and sprinkle with powdered sugar.
