This recipe has everything you love about chicken pot pie, but it's baked in a casserole dish!

Biscuit Chicken Pot Pie

Ingredients
1 Brookshireâs Rotisserie Chicken (approx. 3 cups cooked chicken)
1/2 cup (1 stick) butter
1/2 cup all purpose flour
3 cups chicken broth
1 cup milk
1 cup frozen peas, thawed
1 cup frozen carrots, thawed
2 cups frozen skillet potatoes, thawed
2 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
12 to 16 Brookshireâs Refrigerated Buttermilk Biscuits
Directions
- Preheat oven to 375° F.
- Remove all of the meat from the rotisserie chicken. Set aside.
- In a saucepan, melt the butter over medium heat.
- Whisk in the flour.
- Slowly add the broth while whisking.
- Add the milk.
- Continue to whisk until sauce is thick and begins to bubble.
- Stir in the vegetables, seasonings and chicken.
- Pour into a 9 x 13 or large oval dish.
- Place the biscuits on top of the filling about 1/2 inch apart.
- Bake for 30 to 40 minutes until biscuits are golden and cooked through and filling is bubbly.
