Grilled Pork Tenderloin Kebabs

Ingredients
3 tbsp. Olive Oil
1 tbsp. garlic, minced
2 lb pork tenderloin, cut into 1 1/2-inch cubes
6 skewers
1 tbsp. lemon juice (or balsamic, red or white wine vinegar)
1/4 cup(s) Plain Yogurt
table salt, to taste
2 tbsp. cilantro, chopped
2 tsp. Curry Powder
ground black pepper, to taste
Directions
  1. Whisk first 6 ingredients together in small bowl until well-combined. Place pork cubes in zip-top bag. Pour yogurt marinade over cubes; seal bag. Transfer to refrigerator. Marinate cubes for about 24 hours, turning zip-top bag occasionally to evenly distribute marinade.
  2. Heat grill. Remove pork from marinade; sprinkle with salt and pepper. Thread onto 6 skewers. Place skewers on hot grill rack. Cook over medium-hot fire for about 10 to 12 minutes, turning once. (Internal temperature should read 145° F.)
