Ingredients
3 1/2 cups old-fashioned rolled oats
1 1/2 cups unsalted nuts
1/2 cup unsweetened coconut flakes, pumpkin seeds or sunflower seeds
1/2 cup dried fruit (reconstituted in 2 Tbs orange juice or water, if necessary)
other add-ins: flaxseeds, chia seeds, protein powder or wheat germ (optional)
1/2 cup vegetable oil (can also use grapeseed, canola or neutral unflavored oil)
1/2 cup honey, maple syrup (warm) or agave nectar
1 tsp vanilla
1/4 tsp salt
other seasoning: cinnamon, nutmeg, brown sugar, etc.
Directions
  1. Preheat oven to 325° F.
  2. Combine the oats, nuts, coconut flakes and dried fruit in a large bowl.
  3. If using, add the flaxseeds, chia seeds, protein powder or wheat germ.
  4. In a measuring cup, combine the oil, honey, vanilla, salt and any other flavorings you would like to add.
  5. Stir to combine.
  6. Drizzle over the oat mixture while tossing to coat.
  7. Spread evenly in one layer on a parchment-lined baking sheet.
  8. Bake for 30 minutes until golden and dry to the touch.
  9. Let cool completely.
  10. Stir after 15 minutes.
  11. Store in an airtight container for up to one month.
