Maque Choux Lettuce Cups

Ingredients
1 Tbs unsalted butter
1/4 lb ham, small diced
1 1/2 cups frozen corn, thawed
1/2 cup red onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup bell pepper, finely chopped
1/2 cup green onion, finely chopped
4 cloves garlic, minced
5 okra, trimmed and thinly sliced
1/2 cup tomatoes, seeded and chopped
1 tsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
1 head butter lettuce
Directions
  1. In a large skillet over medium heat, melt the butter.
  2. Add the ham. Sauté for 2 to 3 minutes.
  3. Add corn, red onions, celery, bell peppers, green onions and garlic.
  4. Reduce heat to low. Cook for 4 to 5 minutes until vegetables are soft.
  5. Remove from the heat. Add the okra, tomatoes, Cajun seasoning, salt and pepper.
  6. Set aside to cool.
  7. Remove the leaves from the head of lettuce.
  8. Add 1/3 cup of the Maque Choux to each lettuce leaf. 
  9. Serve immediately.
