Ingredients
1 cup Quaker® Old-Fashioned Oats, plus more for sprinkling
1 cup flour
1/3 cup sugar
4 tsp baking powder
1 tsp salt
1 1/4 cups creamy peanut butter, divided
1 1/2 cups milk
1/2 cup plus 1 Tbs mini chocolate chips, divided
Directions
  1. Preheat oven to 375° F. Prepare an 8 x 4 x 3 loaf pan by spraying with nonstick spray and lining the bottom with parchment paper. 
  2. Place 1 cup of oats in a food processor; pulse until fine. In a large bowl, combine oats, flour, sugar, baking powder and salt. Stir in 1/2 cup of peanut butter. Add milk. Stir until all ingredients are incorporated. Stir in 1/2 cup of chocolate chips. Pour into prepared loaf pan. Sprinkle the top with some whole oats and remaining chocolate chips. Bake for about 50 minutes. Let cool completely. Melt remaining 3/4 cup peanut butter in microwave for 1 minute or until liquefied. Drizzle loaf with melted peanut butter.
  3. Tip: In baking recipes, oats can be substituted for up to half the flour. They just need to be finely chopped in a blender or food processor before adding. Also, a mashed banana can replace 1/2 cup of milk. Nuts can also be added for extra protein.
