Ingredients
2 1/2 cups almond flour
1 tsp ground turmeric
1 tsp Brookshire’s Ground Cinnamon
1/2 tsp ground ginger
1/2 tsp baking soda
1/4 tsp salt
1/3 cup extra virgin olive oil
1/3 cup Brookshire’s Hone
Directions
- Preheat oven to 350° F. Line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, turmeric, cinnamon, ginger, baking soda and salt. Whisk to combine. Add olive oil and honey. Stir until blended. Roll dough into 1-inch balls. Place on a sheet pan 2 inches apart. Slightly flatten balls.
- Bake for 10 minutes or until golden around the edges. Let the cookies cool on baking sheet for 5 to 10 minutes before transferring to a wire rack until completely cooled.
Simple Lemon Icing
- 3/4 cup powdered sugar
- 2 Tbs lemon juice
Stir ingredients with a fork until thick but runny. Spread onto cookies. Let dry before storing.
