Ingredients
1 (2 Lb) pork tenderloin
1 tsp. Ground Ginger
1/2 cup(s) Orange Marmalade
1/2 bell pepper, cut into 1-inch chunks
1/2 tsp. Salt
Cooking Oil
3 tbsp. Honey
8 button mushrooms, halved
1/2 tsp. Cracked Black Pepper
1/2 cup(s) Soy Sauce
2 cup(s) pineapple chunks, fresh or frozen
Directions
- Preheat oven to 375° F. Trim pork to remove any excess fat and silver skin underneath. Sprinkle salt, pepper and ginger over both sides of pork. Heat large skillet over medium heat. When pan is hot, add oil and then pork. Sear pork on all sides until golden-brown. Remove pork to baking dish. In measuring cup, combine soy sauce, marmalade and honey. Add pineapple, bell pepper and mushrooms to skillet. Sauté for 2 minutes. Add half of soy sauce mixture. Reduce heat to low. Cook for 1 more minute, while stirring. Pour ingredients from skillet around pork. Baste pork with remaining sauce. Place in oven for 25 to 30 minutes, or until an instant-read meat thermometer inserted into thickest part of pork registers 155° F. Slice and serve.
